Kalani Cooking Series Continues
Kalani is excited to continue a periodic series of cooking classes that will focus on local and healthy foods. Kalani's talented shift leaders will be sharing their creativity and skills in classes that will focus on a variety of subjects, including how to prepare the wide range of beautiful local produce available on the Big Island. Some classes will focus on vegan, raw and gluten-free cuisine, while others will teach how to master cooking techniques and skills.
Join us Saturday, August 17, 2-4 pm. Lower Mauka 25. 
Ths class will be taught by shift leader Mariana Bergtold, a vegan, macrobiotic chef who trained at le Cordon Bleu in Paris and has owned several restaurants featuring vegan foods.  
Mariana excels at creating vegan dishes that even the most dedicated carnivore will enjoy, as she makes her own tempeh, tofu and nut cheeses, and seitan from scratch.  This class will focus on vegan "cheese" -- Mariana will demonstrate how to make tofu cheese (different styles and flavors and fermentation) and macadamia nut cheese in different styles and flavors, and will include how to prepare and serve vegan "cheeses."

Preparations may include pasta dishes (such as stuffed shells) and vegan spanakopita. The class will feature organic Natural Pacific tofu made locally in Hilo and macadamia nuts grown on the Big Island.   

Admission: $25 ($20 kama'aina). Volunteer price is $10. Reservations are strongly recommended, as there is a 25 person limit on the class.
