Kalani is excited to continue our series of cooking classes that focus on local and healthy foods. Kalani's talented chefs will share their creativity and skills in classes that focus on a variety of subjects, including how to prepare the wide range of beautiful local food and produce available on the Big Island. Some classes will focus on vegan, raw and gluten-free cuisine, while others will teach how to master cooking techniques and skills.

The Secrets of Paella
Chef Ted will share the secrets of making the perfect Paella. Paella is the national dish of Spain – a delicious medley of rice, saffron, seafood, meats and sausage, with a crusty layer of toasted rice on the bottom. In this class, you will learn how to make a traditional Paella Mixta, with shellfish, chicken and sausage, and also a Vegetarian Paella.   Accompaniments to Paella typically include a light salad – we will make a salad featuring Kalani-grown watercress – and, of course, Sangria.

Chef: Ted Leake

In contrast to an avant-garde painter forging ahead into the future, Chef Ted is an ancient Mediterranean artesian potter, throwing timeless and unchanged ceramic pots and amphorae to perfection time after time. Ted Leake began cooking in 1976 while attending the University of Virginia and the University of Valencia in Spain. After graduation, he began a years' long odyssey as a journeyman chef, working in restaurants all over the world including: The Sydney Opera House in Australia, Au Claire de la Lune in Paris and the Mayflower Hotel in Washington, D.C. Odysseus returned to Charlottesville and established Chef Ted Catering in 1991. Chef Ted provides exquisite food, creatively arranged, at an affordable price. He retreated to the Big Island in Hawaii in August of 2013 where he is being treated for existential despair. He reports back that the treatment is working well!
